Baked Zucchini

1 cup Carlin EV Olive Oil
1 cup Chef's Cupboard Bread Crumbs
1 cup Reggano Parmesan Cheese
2 or 3 Zucchini
Carlin Canola Oil cooking spray
1 jar Reggano Spaghetti sauce
1 cup Happy Farms Mozzarella Cheese
Salt and Pepper
Garlic Powder (not pictured)

Steps: 2 parts 

Part I
1. Preheat oven to 350 degrees
2. Clean and slice zucchini into pieces no thicker than a half dollar
3. Combine Parmesan cheese and bread crumbs in a small bowl
4. In a different bowl pour EV olive oil
5. Dip sliced zucchini in EVOO and then in the cheese/crumb mix
6. Spray a baking sheet with the canola non-stick spray
7. Lay zucchini on baking sheet separated and not touching, season with salt, pepper, garlic powder to your liking.
8. Bake for 30 minutes

Part II
9. In a baking dish spray with canola non-stick spray
10. Place a layer of zucchini in the bottom of the dish
11. Cover with spaghetti sauce and a third of the Mozzarella cheese
12. Lay another layer of zucchini, sauce, and cheese
13. Repeat until all gone
14. Bake for 25 minutes
